Cod rougail, olive oil with a subtle flavour

- 300g of cod
- 50g of onion
- 3 tbsp mild-flavoured olive oil
- 1 clove of garlic
- 5g fresh ginger
- 150g chopped tomatoes
- 1 sprig of thyme
- 1 tbsp fresh coriander
- Salt, pepper
- 1 glass of uncooked basmati rice
Tip
We recommend a subtly flavoured olive oil typical of the PDO Nice variety, the PDO Nyons variety, or one made from the Tanche, Cailletier, Lucques, Négrette, etc.
Instructions
- Peel and finely slice the onion. Peel and chop the garlic and ginger.
- Gently fry the finely chopped onion in a little mild olive oil. Add the chopped garlic and ginger, followed by the chopped tomatoes and thyme. Leave to simmer for 5 minutes, covered. Season with salt and pepper, then add the chopped coriander and a tablespoon of mild-flavoured olive oil.
- Cook the rice according to the instructions on the packet.
- Brown the cod in a frying pan with a dash of mild-flavoured olive oil.
- Coat the fish with rougail and a little olive oil, cook for 5 minutes and serve with basmati rice.
