Winter vegetable tian

- 800g of potatoes
- 2 sweet potatoes
- 4 large carrots
- 1 bunch of thyme
- 20 to 30 cl of vegetable stock
- 2 tablespoons of traditional-style olive oil
- 1 clove of garlic
- Grated Gruyère
- Salt, pepper
Tip
To save time, you can steam the vegetables for 15 minutes, then slice them and place them in the dish. Instructions
- To make this winter tian, start by preheating the oven to 180°C.
- Wash and peel the vegetables. Cut them into rounds.
- Arrange the slices in a gratin dish, alternating between the different vegetables. Season with salt and pepper, sprinkle with thyme and crushed garlic, then pour over the vegetable stock and the traditional-style olive oil.
- Sprinkle the tian with Gruyère and bake for 55 minutes (25 minutes if the vegetables have been pre-steamed).
- Variations on this winter tian: you could layer slices of chorizo in between the vegetables, or use butternut squash (or other winter vegetables) instead of sweet potatoes...
