For 6 personnes
  • 1 beef roast (1.5 kg, trussed, without caul fat)
  • 1 pizza dough (either ready-made or use our pizza dough recipe)
  • 90 g black olive paste (PDO Nice or Affinade – made from black Nyons olives PDO)
  • 2 to 4 tablespoons of mild-flavoured olive oil
  • Salt, freshly ground pepper

Tip

You can serve the beef roast in a crust with a foie gras sauce, which you can make by heating 120g of foie gras with 15cl of single cream.

Instructions

  • Preheat the oven to 200°C (gas mark 6/7).
  • Heat the olive oil in a large frying pan, then brown the roast on all sides after seasoning with salt and pepper. Leave it to cool.
  • Spread the olive paste over the pizza dough. Wrap the roast in the dough and place in an ovenproof dish. Bake for 25 minutes. Leave to rest for 10 minutes before carving the meat.
  • Serve with duchesse potatoes.
