- For this recipe for orange and olive oil financiers, you will need:
- 1 untreated orange
- 3 eggs
- 120g caster sugar
- 80g of ground almonds
- 50g of flour
- 50g of full-flavoured olive oil

Instructions
- Preheat your oven to 210°C. Grease your financier tins, if necessary.
- Scrub the orange under a trickle of cold water, dry it and finely grate the zest. Squeeze half an orange and set the juice aside.
- Separate the egg whites from the yolks. In a mixing bowl, whisk the yolks with the caster sugar until the mixture turns pale, then add the flour and ground almonds. Mix together.
- Next, add the olive oil, along with the orange juice and zest. Mix together.
- Whisk the egg whites until stiff peaks form, then gently fold them into the batter.
- Divide the batter between the moulds, place on the middle shelf of the oven and bake for about 10 minutes until the financiers are golden brown.
- Turn out onto a wire rack and leave to cool before serving.
