Hot oysters in olive oil

- 16 Bouzigues oysters
- 1 lemon
- 2 tablespoons of traditional-style olive oil
- 6 sprigs of fresh chives
- Espelette chilli
- Breadcrumbs
Tip
Don’t forget to wear a protective glove when opening your oysters! Choose an olive oil with a traditional flavour profile, with notes of black olives, tapenade, cocoa, sourdough bread and candied fruit… which will pair beautifully with the warm oysters.
Instructions
- Open the oysters and drain the water.
- Preheat your oven to 190°C.
- Make a dressing with lemon juice, traditional-style olive oil, finely chopped chives and Espelette pepper.
- Spoon a little of the mixture onto each oyster. Sprinkle with a little breadcrumbs.
- Bake in the oven for 5 to 6 minutes, then finish off under the grill for one minute.
