Homemade guacamole with olive oil from Aix-en-Provence PDO
Ingredients

- 2 ripe avocados
- 1 medium onion
- The juice of half a lime
- 1 small tomato
- 1 drop of Tabasco
- 1 tablespoon of chopped coriander
- 1 tablespoon of olive oil from Aix-en-Provence PDO
Spices (or a sachet of guacamole spices):
- 1 teaspoon of paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of cumin
- 1 teaspoon of dried parsley
- 1 teaspoon of nutmeg
- 1 teaspoon of salt
Tip
If you like your guacamole nice and smooth, blend the ingredients in a food processor.
Instructions
- Rinse the tomato, then remove the seeds and dice it very finely.
- Peel and finely chop the onion.
- Cut the avocados in half, remove the stones and scoop out the flesh.
- Roughly chop the avocado flesh into pieces.
- In a mixing bowl, mash the avocado flesh with a fork.
- Next, stir in the lime juice, onion, diced tomatoes, chopped coriander, olive oil and spices (or 2 tablespoons of guacamole spice mix).
- Season with salt and add a few drops of Tabasco. Cover with cling film and keep chilled until ready to serve.
