Cod rillettes with lime and olive oil

- 2 limes
- 300g of cod fillet
- Olive oil with a subtle flavour
- 2 shallots
- 1/2 bunch of coriander
- 2 teaspoons of fresh ginger
- 150g fresh cheese (such as Saint-Morêt)
- 30g of green olives (Lucques variety, Picholine, etc.)
- 2 tomatoes
- Salt, pepper
- Espelette chilli
- Toast or toasted bread to serve with

These cod rillettes are ideal as an aperitif, a starter or to serve with a salad – here’s a fresh and flavourful recipe! We recommend a subtly flavoured olive oil for its mildness and notes of (dried, ripe) fruit! Choose from the following olive oils: Nyons olive oil PDO, Nice olive oil PDO, Languedoc AOC olive oil, and olive oils made from the Lucques, Tanche, Cailletier and Négrette varieties...
Instructions
Preheat your oven to 160°C.
Start by grating the zest of one and a half limes, then squeeze the juice from one lime.
- Place the cod in an ovenproof dish. Lightly brush the fish with oil and drizzle over a teaspoon of lime juice. Season with salt and pepper.
- Then bake in the oven for 15 minutes. Leave the fish to cool.
- Meanwhile, peel and chop the shallots. Wash, dry and chop the coriander. Peel and grate the ginger. Stone the green olives and dice them into small cubes.
- In a mixing bowl, mix together the shallots, coriander, ginger, lime zest, green olives and cream cheese.
- Wash and quarter the tomatoes, then remove the seeds and dice them very finely. Set aside.
- Flake the fish into the mixing bowl, then mix it in with the other ingredients, mashing everything together with a fork. Add the diced tomatoes, a teaspoon of lime juice, some Espelette pepper and finish with a drizzle of mild olive oil. Season with salt and pepper to taste, then chill.
- Serve as an aperitif on toasted bread or toast.
